Deep, dark amber
This spirit needs time to open up and reveal its intense aged character. Christmas cake and aged barrel rancio characters open up into espresso, cacao, dark chocolate, dried apricot and dates along with burnt buttered toast with marmalade.
The palate is full and upfront with a very rich mouthfeel. Alcohol hotness is offset with tannin grip from barrel maturation. There is a hint of cardamom along with walnut and dense Christmas cake fruits. Patience and reflection is needed to get the most out of this, its length is un-paralleled and deeply satisfying.
A spirit that shows its historic concentration and character. Minimum spirit age is 40 years old, with the oldest component distilled in 1970.

A la Carte Lunch reservations 12:00 pm - 3:00 pm, Thursday - Sunday. We can successfully look after groups of 6 or more on our multi course Feed Me menu for $79.00 per guest.
Outside of these times, we offer a selection of smaller plates, cheese and charcuterie.
