VINEYARD & VINTAGE: The grapes for this wine were sourced from vineyards in the Blewitt Springs and Sellicks sub-regions of McLaren Vale. The perfume of Blewitt Springs contrasts and combines with the spice and pepper of the southerly Sellicks vineyards.
WINEMAKING: Each parcel was picked separately when at peak ripeness, transported to our winery where it was cooled to 5 degreesC before being fermented according to taste and terroir. Pressed and then allowed to mature in 2nd and 3rd use French oak puncheons before the final stage of blending prior to bottling.
TASTING NOTES: An enticing bouquet of ripe cherry and dark damson plum, layered with exotic star anise, cracked black pepper, and a whisper of earthy spice.Opulent notes of cherry compote and spiced plum unfold on the palate, with well-structured oak adding complexity and richness, all wrapped in a silky, seamless texture with a long, lingering finish.
